Very easy to make, this creamy and delicious sweet potato cream soup, will make you want to come back for more. All you need is just a few ingredients and 30 minutes of time.
If you are making your own broth, prepare the broth. I used home made chicken broth for this recipe.
Wash, peel and roughly chop the vegetables (potatoes, onion, carrots and sweet potato).
Place in a medium pot, and fill the pot with chicken broth, just to cover the vegetables.
Bring to boil and cook for about 20 – 30 minutes. Or until the white potatoes are cooked through.
Once cooked, remove from heat. Do not drain.
With a hand mixer, blend the vegetables and the liquid together, until smooth. Might take a couple of minutes.
Add the heavy cream ad butter. Blend until smooth and well combined.
Serve with sour cream and buttered toast.

- 2,5 Liter chicken broth
- 2 medium sweet potatoes
- 3 medium carrots
- 1 large onion
- 3 medium potatoes
- salt, to taste (optional)
- freshly ground black pepper, to taste (optional)
- Sour cream, for garnish
- 2 tablespoons butter
- ¼ cup heavy cream

- Bring to boil and cook for approximately 20-30 minutes. Until the white potatoes are cooked.Once done, take off the heat.Do not drain the water!
- Take the hand mixer and blend everything, until smooth.Add the cream and the butter, blend together until well combined.
- Serve with sour cream and buttered toast.Enjoy!
