Vegan Bulgur Pilaf

Sometimes you really crave something light and healthy, but filling at the same time. Bulgur Pilaf is exactly that. Light and flaky with fresh vegetables and a fresh pita bread … a perfect dish for a fast, healthy and hearty dinner.

Start by soaking the bulgur wheat in water. It will need between 10-15 minutes of soaking, before you can eat it.

While the bulgur is soaking, heat up the oil in a frying pan or a medium sized sauce pan. Add the tomato paste and cook for a couple of minutes, until fragrant and begins to incorporate into olive oil

When the bulgur wheat has absorbed all the water, add it to the pan with the tomato paste. Add all the remaining ingredients, red onion, green onion, bell pepper, tomato, parsley and ground cumin.

Mix well, until the bulgur is completely coated in the tomato sauce.

Can be served hot or cold, with meats or fresh pita breads. Delicious either way.

Ingredients

  • 2 tablespoons olive oil
  • 3 tablespoons tomato paste
  • 1 large ripe tomato, finely chopped
  • ½ green bell pepper, finely chopped
  • 1 green onion, finely chopped
  • ½ small red onion, finely chopped
  • 1 tablespoon parsley, finely chopped
  • cups bulgur wheat
  • 1 teaspoon ground cumin

Instructions

  • Heat up olive oil in a medium deep frying pan or sauce pan. Ad tomato paste and fry for a couple of minutes, until fragrant.
  • Soak 1½ cups of bulgur wheat in 1 cup of water for about 10-15 minutes. Fluff occasionally until water is fully absorbed.
  • Add the soaked bulgur to the pan with the tomato paste. Add the tomatoes, bell pepper, onions, parsley and ground cumin. Mix well, until the bulgur is well coated in tomato sauce.
  • Can be served cold or hot. Goes well with any meats or over a fresh pita bread.
  • Enjoy!
