Heart of rump a.k.a pave rump steak is a succulent cut that is very special due to it’s richness in beef flavor. It’s packed in flavor! It’s probably one of the most flavor rich beef cuts in the world! 🙂
If you haven’t tried it, I highly recommend it: pave rump is lean and healthier to consume than other cuts.
I took the steak out of the fridge about one hour before dinner and salted it with some coarse sea salt. I set it beside, along half a garlic head some rosemary and chopped chives.
Now grilling is pretty much standard, we used a stove grill which allowed some basting with rosemary garlic butter.
Of course, you can also grill it outdoors and then just baste it in a pan if you want.
Let it rest 5 minutes before serving.
Since the meat is lean, it gets a bit harder than other cuts so I recommend you slice it before serving.
It’s incredibly juicy, probably the juiciest of all steaks in the world! 🙂
Sprinkle the chopped chives and ground some black pepper on top.
Serve with your favorite side dish and enjoy this amazing steak! 🙂
“Heart of Rump” on a grill
Equipment
- Stove top grill
Ingredients
- 350 g heart of rump steak (hüftsteak)
- 2 tbsp butter
- 2 sprigs fresh rosemary
- 1/2 head garlic
- coarse sea salt
- black pepper
Instructions
- Bring meat to room temperature before cooking.
- Grill 3-4 minutes on one side.
- Turn on the other side, add butter, add rosemary and garlic and baste the steak for another 3-4 minutes.
- Remove from grill and let it rest 5 minutes.
- Slice and sprinkle chives and freshly ground black pepper.Enjoy!
